🙌🏾 This is a chili fan account y’all 🌶️ There are so many ways to make chili suit your health goals and you can prepare it in numerous comforting and nutritious dishes 🤤 picture chili Mac, loaded fried, served with broccoli + rice - the possibilities go on!
1. In a medium/large pot over med heat, sauté onions ~3 min (add in cooking oil or a splash of broth if non-stick) then add garlic, pepper and jalapeño and pinch of salt
2. Stir in spices, tomato paste, canned tomatoes, and broth and wait until it begins to boil, stirring occasionally
3. Add lentils and reduce heat to a simmer - put on a lid and stir every ~3 min until lentils are soft/chewable (~10-15 min)
4. While that’s cooking, carefully poke holes in the sweet potato with a knife/fork, wrap loosely in a damp paper towel, and microwave for 2 min, flip, and cook for another 2 min until soft - once cool, dice
5. Add beans, kale, and sweet potato to the pot and stir - at this point, carefully taste the chili and assess spice/salt needs!
6. Let all ingredients simmer with a lid for 15 min, stirring occasionally
7. Taste test to reassess flavor needs - other than salt/cayenne, I feel like it’s safe to let the spirit move you when pouring, stir well, taste, and go from there!
8. Then add salt at the end (and cayenne for heat)
- Enjoy! I like to freeze up to a month and have extras for later :)
