If you haven’t loved the texture of overnight oats or just want a new (delicious) recipe, this one is for you! The author struggled with the coldness and texture of overnight oats but found this recipe that she literally had every day during her hardest and busiest months as an intern doctor (surgery).
1. In a sauce pan, add blueberries on medium heat, stir occasionally until they are able to be mashed down.
2. While the blueberries are cooking, add oats, liquid of choice, cinnamon, and nut butter to 5 separate containers.
3. Once the blueberries are soft, mash them gently with a potato masher/spatula, just until about half of the berries are broken down. Add sweetener of choice, carefully taste and adjust as needed.
4. Remove from heat and add chia seeds, mix them in and let cool/thicken for about 10 minutes.
5. Place 1/5 of the blueberry mix into each of the oat containers, give them a little mix/shake, close the containers and put in the fridge overnight or for at least 6 hours.
6. You can eat them cold or put in the microwave for 2 minutes on 50% power, this creates a more room temp pudding effect. Feel free to cook for longer if you prefer them warm.
